Solla from Iceland

Here’s a video interview of Kate with one of her dearest friends, Solla from Iceland. Solla is the leading person in Iceland for all things vegetarian and organic, as well as all things raw. She is the author of five books, all best-sellers, and has her own line of wholefood products which are stocked in Icelandic supermarkets. Her restaurant Glo is one of the hippest destinations in Reykjavik with queues of people coming for lunch every day.

In this two-part interview, Kate and Solla talk about her background, the most popular dishes in the restaurant, why raw foods is becoming so popular in Iceland, and the potential for the country to grow much of its own produce.
