Stuffed avocado is one of those recipes from Eat Smart Eat Raw that I still make. It’s hard to believe that that book is ten years old now, and although in a lot of ways I feel it’s very dated (I’d love the opportunity to do a rewrite), there’s plenty of recipes in it that I still refer to.
What follows is my updated version of stuffed avo; the original is made with pumpkin seeds and sunflower seeds which have been marinated in tamari and dehydrated (like Sunseeds), so making a full-bodied and meaty stuffing. This version is much lighter and fresher, and, it goes without saying, equally wonderful.
Basically, I love avocados and any excuse to eat a whole one is good with me. Serve half as an accompaniment to salad, or both halves as a quick but filling snack lunch.
